Berber Sauce - This unusually spicy sauce originated with the Berbers, the nomadic
people of North Africa. It is delicious on roasted vegetables, baked
potatoes with rice or grilled fish. The toasted spices clear your
sinuses and allow you to fill your lungs deeply.
Ingredient for Berber Sauce
1 small onion, finely chopped
1 garlic clove, finely chopped
1 hot pepper - jalapano or chilli finely chopped
1 inch piece of fresh ginger, finely chopped
1 teaspoon of coriander seeds
1 teaspoon of cardamon seeds, crushed
2 teaspoon of blacked peppercorns , cracked
1/8 teaspoon of ground cinnamon
1/8 teaspoon of ground allspice
1 clove
5 tablespoon of paprika
115ml olive oil
juice of 1 lemon
Preparation Method For Berber Sauce
Place the onion, garlic, chilli, ginger and the all spices into a dry frying
pan and cook over a medium heat for 2 minutes, or until the spices are
fragant and lightly toasted. Combine the toasted spices with the
cracked peppercorns, the olive oil and the lemon juice in a blender or a
food processor and blend until to a smooth paste.
