Potato and Leek Soup

 


Potato and Leek Soup Ingredient

30 ml/ 2 tbsp vegetable oil
2 leeks, washed and chopped
1 small onion, peeled and finely chopped
350 g/ 12 oz potatoes, peeled and chopped
900 ml / 3 3/4 cups vegetables stock
ground black pepper
chopped fresh parsley or chives to garnish


Potato and Leek Soup Preparation Method

Heat the oil in a large pan over a medium heat.  Add the leeks and onions and cook gently, stirring occasionally for about 7 minutes, until they are soften but not browned

Add potatoes to teh pan and cook for about 2-3 minutes then add the stock and bring to boil.  Cover and simmer for about 30 - 35 minutes.

Season to taste with ground pepper and remove the pan from teh heat.  Serve sprinkle with chopped parsley and chives.

Makes 4 servings

Per Servings; 138 calories, 3.3 g protein, 18.2 g carbohydrates, 6.3 g fat, 33 mg cholesterol, 12 mg sodium, 3.3g fiber.

Minestrone Soup is good for digestion.
