Mediterranean Coleslaw
Meditteranean Coleslaw Ingredient
1 medium tomato
1/2 head of cabbage, shredded very fine
1/2 red bell pepper, sliced into slivers
4 tablespoon olive oil
Juice from 1/2 lemon
1/2 teaspoon salt to taste.
Meditteranean Slaw Preparation Method
Quarter and slice the tomato very thin.
The tomato will release a lot of juice as you slice it.
Combine the juice the tomato slices, the cabbage and the pepper
in a bowl. Drizzle on the olive oil and toss. Add
lemon juice and toss again.
You can serve the Mediterranean coleslaw
right away or serve after refrigerate for several hours.
