Chicken Pie
This spicy chicken pie is easy to make and tasty
Chicken Pie Ingredient
1 cup cornmeal
1/2 cup unbleached flour
1 tablespoon sugar
1 1/2 teaspoons baking powder
3/4 pound boneless, skinless, chicken breast cubed
1/2 cup chopped onions
2 tablespoons chili powder
1 can low sodium tomatoes
1 cup corn
1 cup chopped green bell peppers
1 can canned kidney beans, rinsed
1 teaspoon dried oregano
1/3 cup fat free milk
1/4 cup egg substitues
Chicken Pie Preparation Method
Place the cornmeal, flour, sugar, and baking
powder in a reseal able plastic bag. Set aside.
Coat a nonstick skillet with nonstick cooking
spray; heat for 1 minute. Add the chicken, onion and chili
powder. Cook stirring often, until the chicken is browned
and cooked through. Add the tomatoes, corn, peppers,
beans, and oregano, stirring to break up the tomatoes.
Spoon into an 8 inch square baking dish.
At this point you can finish making the casserole or cover it
with foil and refrigerate it until the next day. To finish
the casserole, cover it and bake at 400 F for 10 minutes.
Pour in milk and egg substitute into the bag
containing the cornmeal mix. Seal the bag and knead to mix
the ingredient. Stir the casserole. Cut a corner
from bag and squeeze the batter over the casserole. Bake
until a toothpick inserted into the cornbread comes out clean,
about 20 minutes.
Make 4 servings.
