Carrot Soup

Ingredient For Carrot Soup

6 large carrots, sliced thinly
1.4 l vegetable stock
1/4 tsp each of ground cumin,
ground coriander, ground cinnamon
cayenne pepper
black pepper to taste.

Preparation Method For Carrot Soup

Simmer the carrots with 140 ml (1/4 pint) of vegetables stock until tender.

Puree in a blender or food processor.  Return to the pan, add the spices, stir and add remaining stock and simmer for 20 minutes.  Season with pepper to taste.
