Apple Cinnamon Cake
This butter bean apple cinnamon cake recipe is inspired combination flavors popular in North African and southern European dishes. Both beans and apples lower blood cholesterol, and cinnamon work further to keep blood sugar levels in check. The touch of turmeric also adds anticancer compounds to the dish.
Ingredient For Butter Bean Apple Cinnamon Cake
1 tbsp olive oil
1 large onion, chopped
1 large cooking apple, diced
795g (1 3/4 lb), or two cans, cooked butter beans - keep the cooking or canning juice
1/4 tsp turmeric
1/2 tsp ground all spice
3/4 tsp cinnamon
Heat the oil in a large saucepan, add the onion and sauté until golden. Add the apple and seasonings and simmer until soft, but not too mushy. Add the beans and a scant 285 ml (1/2 pint) of the reserved liquid. Simmer the butter cinnamon apple cake for 10 minutes before serve.
